Quinoa is already favorite in the U.S., and this called super food. I like quinoa and usually serve like salad. I cook quinoa this time, not cold salad and more likely rice. I also love mushrooms and especially shiitake. I think shiitake have more flavor than other mushrooms. I suggest you can choose any mushrooms but add some shiitake, and you can cook more delicious flavor of pilaf. Also, I recommend you should use a variety of mushrooms for this recipe.
Ingredients
1 Onion
1 Cup Shiitake mushroom
1/2 Portabella mushroom
1 or 2 cloves Garlic
1.5 Cup Quinoa
1.5 TBS Oil
1.5 Cup Bullion ( I use vegetable bouillon cube)
1TBS Soy sauce
1TBS Sake
Instruction
1 Cut small dice all vegetables (Garlic is mince)
2 Wash quinoa
3 Put oil in the frying pan and low heat
4 Put garlic in the pan
5 Turn heat medium and put onion and mushrooms and cook them together
6 When vegetable are cooked, put quinoa and cook them together
7 Add stock, soy sauce, and sake on the quinoa pan
8 Put the lid and turn the heat high until it boiled
9 When it’s boiled, turn the heat low and leave them around 20 min.
10 If you see the row quinoa, add water a little and put lid and cook with low heat
11 Salt and Pepper for the taste (Add little by little until you satisfy your taste)
12 Add minced scallion on top
