Chicken and Cauliflower Sweet Miso Sauce

This is my favorit recipe. It is sweet miso and very good with chicken and cauliflower! This is not original Japanese recipe and not popular but I really like it! So I will share with you.

Marinate souce

Soy Sauce ————————————Tsp1
Sake —————————————Tbs1
Egg —————————————-1/3
Potato starch ——————————-1 1/2
Oil ——————————————Tbs 1

Cauliflower ———————————-whole 1
Chinese Onion ——————————1
Ginger————————————–1 (half of inch)
Garlic ————————————–Tsp1
Tenminjyan ———————————Tbs3

#Sauce#
Sugar ————————————–Tbs1
Sake —————————————Tbs1
Soy sauce ———————————Tbs2
Papper ————————————pinch
Potato starch with same amount water ———Tbs1
Chicken stock soup ————————–Tbs2

Like many Chinese recipe, you will deepfry chicken and vegetables.

Cut chicken about half inch and put in the marinate sauce.
Heat up the oil in the deep fryer about 320F and put chicken and take out and drain oil.

Cut cauliflower about same size as chicken and put in deep fryer and fry them and take out.
Drain oil.

Put 1 Tbs oill in the frying panand put ginger, garlic and onion, cook together.
Then put tenminjyan – brown sauce and sautee it.  Add chicken and cauliflower and mix them together.
Lastly, add #Sauce# in the pan.
I usually put high heat to cook this recipe.  Chinese food is good with high heat and gas is the best.
I use electric and try not burn them.

Caramel Popcorn Recipe

Low calorie recipe for Caramel popcorn. I make this very often!
If you make your own, you can control your sugar and butter, i recommend you would make this instead buy it. It is cheaper, and less calories. The best thing is it is so Yammy!!

You pop the popcorn first.
I put popcorn in the paper bag and put them in the microwave.
heated about 2 min and take it out. I probably put about 1/4 cup of corn in the bag.

Make caramel:
2tbs water and 2tbs sugar together in the pot and high heat cook it until become brownish color (almost thicker than water) Then put butter 2tbs and melt them together. When you mix this, please use wooden spoon or something not plastic!

Put popped popcorn in the caramel pot and mix together.

Very Easy Italian Puttanesca Spaghetti Sauce Recipe

This is a VERY easy Italian spaghetti sauce named Puttanesca Spaghetti. Here is the recipe! Plain meat sauce was my favorite for a long time but when I discovered this taste, this one become a #1 pasta to me.

My German friends liked it very much! Even my friend from Italy said he likes it. It was a very nice compliment to me.

OK, OK!! This is not Japanese recipe, but Italian is very popular in Japan. Japan has many Italian restaurants, of course. Many Japanese chef go to Italy and learn real Italianfood. This is my favorit recipe. It is easy and taste so good. So I decided to put here. Maybe somebody eles would appriciate this recipe hiere.

This is easy to cook. Also I do cheat with this meal. So this is extra easy.
What I mean, I use canned spaghetti sauce. I don’t use my own spaghetti sauce from scratch for this page.

Ingredients:

Spaghetti pasta
Can or jar spaghetti souce your choice ——————————–half can
Anchovi can ———————————————————1 can
Olives —————————————————————1 can
Olive oil ————————————————————- 3tbs
garlic —————————————————————-1 clove
caiper —————————————————————2tbs
Small red chili ——————————————————–2 peice
Italian parsley (I recommend this if you can get it)———————little

Cook Noodle

Boil water in a large pot with some salt. Put in the noodles and cook until the spaghetti is half-way done – still has a core in the middle of the noodle. This is called al dente. Drain the noodles when done. Do NOT rinse the noodles. Do not cook the noodles too much! You will cook the noodles in the sauce in the pan. You do not want soggy noodles.

Cook Sauce 

Put olive oil in a saucepan with crushed garlic and broken chili peppers. Keep the heat low so the flavor gets into the olive oil. Put in the cut anchovies from the can and cook until it becomes paste-like. Add hand crushed olives, capers and spaghetti sauce.

After sauce is done, put in the spaghetti noodles and mix it together.

How to make Chinese dumpling and dumpling sauce recipe. This is hot and sweet miso base sauce recipe.
In Japan Yaki (pan fried) gyoza (dumpling) is more popular but I like this one very much.
The sauce is the key for this recipe. Also, this is easy because it cook in the water so for the cooking beginners, it is much easier than pan fried.
Plus, it is easy folding dumpling. Pan frying dumpling need some technique.

Ingredients:

Gyoza skin ————————————-1 pack
Pork ——————————————-2  4/5 oz
Salt and papper ——————————–pinch
Sake ——————————————1tsp
Sesame oil ————————————-1tsp
Soy souce ————————————-1tsp
water —————————————–1tbs
Potato starch ———————————-2tsp
Chinese cabbage or cabbage (option) ————about same amount as meat
Dried Shiitake mashroom (option) —————3 to 5 pieces

Sauce
Spicy Brown Bean Sauce (Tei mien jan)————-2tbs
Tahini —————————————–3tbs
Soy souce ————————————-2tbs
Hot sesame oil ———————————-1tbs
Rice viniger ————————————1tsp
Grind garlic ———————————-1tsp
Sesame oil ————————————-1tsp

There are two different ways to cook dumpling.  One is to cook in boiled waterl, like ravioloi and the other way is, more popular in Japan, cook in the pan.

This is water cooking version of Gyouza, called Sui-Gyoza.   I make this and many people like it very much.

First, you will cut Chinese cabbage or regular cabbage and cook in the boiled water (I used this time Chinese cabbage). Drain the water, and squeeze by hand and take off the water (you see the picture below the ball of cabbage next to the meat in the bowl).   Do not take too much water off.   Soak dried shiitake mashrooms in the water until it softens.   Cut the shiitake mashurooms julian style.

Put all ingredients in the bowl and put salt, pepper, sake, sesame oil, soy souce and mix together.
You see the picture, you have to mix very well. You can not only mix and separate the ingredients, you really mix everything together( you see the picture, I did almost whip the ingredients).   This is the point.   If you mix meat that way, the meat will have more taste to it.  Chinese cabbage has many glutamic acid, if you mix it with meat well, the meat taste much better!

Make the sauce, now.

This time, my wrap skin was too dry so I use fork to press the edge. If it is too weak, it will open when you boiling this in the water.

Boil the water in the pot and slowly add dumplings into the water.  When they are done cooking, they will start floating on the top of water.  After removing the dumplings, put them in the sauce bowl soon and mix all together.
