Shira Ae is popular and traditional food in Japan, and you see many varieties of vegetables. However, using nuts is not such favourite ingredients. Using nuts as in the ingredients is a feature of shojinryori.
This time I use persimmon, which is autumn food. For Japanese food such as shojin ryori and kaiseki ryori, it is important to put the season in the ingredients and it is an art of culinary.
Ingredients
200g Turnip leaves (0.44lb)
1/3 Persimmon
2 Shiitake
2ts Sake
Pinch Salt
30g Walnuts (0.07lb)
300g Tofu (0.66lb)
1 TB Sugar
1/2 tsp Salt
Instruction
1) Cut all vegetables
2) Boil water and put tofu in the water, turn the heat down and cook about few minutes. Do not cut tofu by knife, tear tofu by hand. Take out tofu and drain and dry
3) Crush walnuts and grind, add sugar and salt
4) Mix all the ingredients and serve
