Koya-Dofu is very healthy, freeze-dried tofu, and it is vegan cooking. This dried tofu is high calcium, high protein, and low carb, gluten-free food. Koya-tofu is tofu that has been frozen, then dried. Cook in tasty dashi, and let it soak up the broth well. So, there are many different ways to cook these ingredients and also is often used for Shojin ryorui which is Japanese traditional vegan cooking.
When I took a nutrition class in college, I had to report what I am missing nutrition for my body, and I needed iron and calcium. These ingredients have both nutrition. I have to start eating Koya-dofu more and want to learn how to cook them.

Ingredients
2 Koya-dofu
Oil for deep fry
1tsp Sugar
2TBS Soy sauce
1TBS Vegan mayonnaise
2TBS Mirin
2TBS Sake
1TBS Ginger
3TBS Potato starch
Scallion
Sesame
Instruction
1 Soak Koya dofu in the water and wash by squeeze in the water
2 The Koya dofu does not have white water when you squeeze, it is done for washing
3 Cut Koya dofu for 6 to 8 pieces
4 Put Koya dof in the plastic bag and add Potato starch and shake it well
5 Heat oil and deep fry Koya dofu
6 Make sauce: Soy sauce, sugar, vegan mayonnaise, miring, sake, ginger in the small pot and heat and cook them together
7 Put deep fried tofu in the sauce pan
8 Serve and put scallion and sesame on top
